Roast Monkfish and Garlic

Ingredients (Serves 4/6):

28104   1kg Monkfish Tails

75296   1head Garlic

75129   5g Fresh thyme leaves

13644   30ml Olive Oil

75252   2 Bay leaves

75140    Juice of 1 lemon

 

Method:

  1. Pre heat oven to 220c/425f gas 7
  2. Skin, clean and remove central bone of Monkfish
  3. Peel the garlic and thinly slice the cloves
  4. Place these with some of the thyme over the cut side of the fish
  5. Brush with half of  the oil
  6. Place remaining oil in frying pan and heat
  7. Place fish in hot oil
  8. Add other thyme and the bay leaves and lemon juice
  9. Cook to golden brown
  10. Season lightly
  11. Place frying pan in the  oven and cook for 15/20 minutes
  12. Remove from oven allow to rest
