Roast Monkfish and Garlic
Ingredients (Serves 4/6):
28104 1kg Monkfish Tails
75296 1head Garlic
75129 5g Fresh thyme leaves
13644 30ml Olive Oil
75252 2 Bay leaves
75140 Juice of 1 lemon
Method:
- Pre heat oven to 220c/425f gas 7
- Skin, clean and remove central bone of Monkfish
- Peel the garlic and thinly slice the cloves
- Place these with some of the thyme over the cut side of the fish
- Brush with half of the oil
- Place remaining oil in frying pan and heat
- Place fish in hot oil
- Add other thyme and the bay leaves and lemon juice
- Cook to golden brown
- Season lightly
- Place frying pan in the oven and cook for 15/20 minutes
- Remove from oven allow to rest
